Eggplant Vegan Lasagna

1 eggplant diced
1 jalapeno pepper
1 tabble spoon of kale
4 slices of vegan cheese
2 cloves of minced garlic
5 sliced Portobello mushrooms
2 cups of shredded tofu
2 cups of spinach leaves
1 cup of dices onions
9 cooked lasagna noodles
2 Jars of spaghetti sauce

Broil lasagna noodles then place the first three in tin foil pan on top of spegetti sauce. Add all the above ingredients for the first layer then cover with 3 more lasagna noodles repeat one more time and cover top noodles with spaghetti sauce. Preheat oven to 375 then bake for 50 min or until spaghetti sauce boils. Set to cool for 10 min and serve.
